This was a very easy and delicious recipe. The corn tortillas still cracked even though I used the dressing and heated them first. Still tasted good though. Next time I may try flour tortillas since that is what I usually have with tacos.

These turned out well. I added 1/2 cup chopped onion when cooking the beef (I used a full pound). Also, I was concerned about my 7 yr old thinking it was too spicy so I watered down the salsa I added (about 1 1/2 c. salsa and 1/2c. water). Both my daughter (I kept the peppers & onions out of a couple for her) and my husband gave it a thumbs up! And it wasn't too hard either!

I'm not usually an echilada fan, but these were really terrific. I actually doubled the recipe, as two enchiladas are not enough for one adult. I will now throw away any other enchilada recipe in my kitchen and will stick with this.

This was awesome! I did the same thing the other reviewer did - used flour tortillas. I didn't have all the ingredients so I passed on the salad dressing and added a can of diced tomatoes that already had green chiles and it to the meat. The whole family enjoyed it, not easy with my young kids. We'll get a lot of use out of this one!

This was a great recipe. The only thing I changed was instead of corn tortillas, I used low carb flour tortillas. They are actually lower in calories than the corn tortillas. It was great! This is one I will make over and over again.

very good! I didn't put salsa on top of the enchilladas, just baked and then put the cheese on top. Pretty fast to make and very tasty!

A hit with everyone! Easy to make and the peppers and salsa make it very moist and flavorful. Plus, you can't go wrong with the nutrional value.
