My husband and I loved this recipe! It was very quick and easy and is one of the best enchilada recipes I have ever tasted.

I've made dishes like this before but this one my family really enjoyed. My husband continued to rave throuhout dinner and I guess it was the tortilla prep with the dressing that made a difference. It was easy, I had all ingredients on hand, amd dinner was on the table in no time.

This came out very good - I used extra salsa inside and instead of coating the bottom with the salsa used non-stick spray. The dressing works really well to keep the tortillas soft and I used ground turkey instead of beef. VEry good - very easy - great even as a leftover.

This recipe tastes so good. It's very satisfying. I didn't crave a snack before bed the night we had this. The only down side was that it looked beautiful in the pan, but fell apart as I dished it out. Next time I will serve it tostada style, baking the dressing brushed tortillas in the oven to make them crispy. Another good idea would be to serve the filling on a bed of lettuce for a low carb taco salad.
