We cut out a little of the meat, upped the veggies and used better-for-you ingredients to trim calories and fat from this enchilada dish. What we didn’t trim was flavor.

These tasted great and were super easy to make. I added onion and taco seasoning. Also put non stick cooking spray on the bottom of the pan instead of salsa. This made a dozen enchiladas. Next time will add fat free refried beans.
This recipe was so easy to make. The ingrediants are simple to find and prepare. It came out of the oven looking beautiful and smelling even better!
there are too many really good enchilada recipes out there that are way better than this one - use one of those instead!
This was the first time I made enchiladas at home for my family (I doubled the recipe) and it still only took me one hour to prepare. I browned the ground beef with a little chopped onion and some minced fresh garlic, along with some cayenne pepper. I also had a packet of taco seasoning lying around that I added to the beef mixture as well. The filling turned out great, but overall, the enchiladas were a little drier than I expected. I think I will use more salsa next time.
Really tasty!!! I use whatever percentage of ground beef I have on hand and put as much salsa on top to cover. It always comes out great. I freeze left over corn tortillas and when I use them after they have been thawed they tend to crack more often.
These were alright. My husband liked them, but I didn't really. I doubt I'll make these again.
This was awesome! I dropped the peppers (b/c we didn't have any) and added green onions instead. I also used flour tortillas and did not coat them with the dressing. I will definitely make this again! Great idea!!
This was easy and delisious! My family loved them! I motified it to make it as low fat as possible, and i was still very tasty! The only thing i will not do next time is put the salsa on the bottom of the pan, it just seemed like a big waste of all that salsa. Just use non stick cooking spray.
I have recently found out to have Type 2 diabetes and I happened upon this website. Your recipes are very good and it makes me glad to be back in the kitchen. This recipe can be enhanced with the medium salsa.
My favorite enchilada's use corn tortilla's however this recipe is very good and fast. We all love FAST, right? I put sliced black olives in with the meat mixture when rolling up in tortilla. Just personal preference. Serve with a dollup of sour cream and chives on top.
