We cut out a little of the meat, upped the veggies and used better-for-you ingredients to trim calories and fat from this enchilada dish. What we didn’t trim was flavor.

I've made this recipe a bunch of times now. Today was the first time I used corn tortillas. I will make this again but I am going back to using flour tortillas. The corn ones fell apart when I rolled them and I ended up with an enchilada casserole instead of individual enchiladas! It may of just been the brand I used, I don't know. It was still good though.

Very tasty. I would have liked a little more sauce with the enchiladas. I may try adding taco sauce next time.

Good stuff! Super easy! I used flour tortillas and a little bit of enchilada sauce on the bottom of the pan instead of salsa. The leftovers reheated well!

I made this last night and it was excellent! I will make these again and I will probably never make chicken enchiladas again! VERY GOOD!

These were a dinner time hit! Not only were they great fresh, but made wonderful leftovers as well! I will make over and over!

My husband loved this recipe! We keep changing up the recipe to our liking, but have used it several times now. We love it!

Great recipe, very easy. After spreading the salsa over the top I also added extra cheese. Very good!

Great taste and easy to make. I thought there wouldn't be enough meat but stuck to the recipe and it was great. Will definitely be making again.

My family loved this recipe...but next time I will try it with flour tortillas instead.
