This is one of my favorite cheesecakes! I've made it numerous times. However, I have always made it in a springform pan. I crush and use 1 1/2 cups of vanilla wafer crumbs and mix with sugar and butter like making a graham cracker crust. Presentation is beautiful on a cake stand. I'm making this tonight for my daughter who will be serving it at a baby shower tomorrow night.

We love this, and every party I've made it for eats it all. I do make a few changes; instead of brushing with the instant coffee, I brush with brewed coffee and I double the instant coffee in the cream mixture. It makes it have a better coffee bite and no bitter flavor. I've also substituted half neufechtal cheese for half the cream cheese, and I think it's better. Using freshly whipped cream also adds an addictive flavor. Cutting the recipe in half for the springform works very well too.

I would like to know if you can use ladyfingers instead of vanilla wafers when making the springfoam cheesecake.

I made this recipe yesterday for dessert at our Thanksgiving dinner. I have somewhat mixed reviews of this. Real Italian Tirimisu is light and fluffy. This cheesecake had very good coffee flavor. It had the same coffee flavor as the Private Selection Tirimisu ice cream. This cheesecake is very rich, thick, and dense. The cookies seemed to soak up all of the moisture in the cake. You certainly wouldn't want to eat a big piece of this. Most of the guests liked it very much. My husband (who is not a coffee drinker)did not care for this. I did follow the directions only I used Kaluha in fresh brewed coffee instead of the instant. I also added the Kaluha in the batter that you mix the coffee in as well. I think this would turn out much better if prepared in a springform pan. Overall it was simple to make...looked pretty..but was too thick/dense.

I made this cheesecake on Christmas Day and everyone loved it. I did an Italian theme for a change and wow what a crowd pleaser it was. Lasagna, salad, bread and this cheesecake!!

The taste was good, I love coffee. However, the texture was odd. I followed the recipe and was not impressed- neither was anyone in my family.

Good texture and great taste. I took this to work and it was gone before I went home. Did double the coffee to soak the wafers a bit more. Everybody loved it!

I make this cheesecake for just about every dinner party or gathering I have. It is ALWAYS liked and people request it by name now. I love coffee so I add a bit more to the batter. Use the cocoa powder sparingly, otherwise it will choke you up when you try to eat it...lol! Such a great recipe!!!!!!
