My husband LOVED this recipe! I used peas because I didn't have broccoli, but the broccoli would be delicious, too. I think it's the Italian dressing that really makes this recipe!

This was quite yummy. I did make some changes, but this was only because I didn't have all the ingredients. It was yummy. Does anyone have any ideas what I can add to this yummy recipe?

My family couldn't rave enough about this!!! I fixed it the way it was without the red peppers. Loved the idea of cooking in the foil as made for quick clean-up and everything was nice and moist. We thought it had lots of flavor. Will definitely make it again!!

I agree it was rather bland but my husband used the ranch dressing to dip it in and he enjoyed the meal.

Very good! I made the rice separately and added corn and baby squash. Also added a pinch of cumin. Easy recipe!

We loved this recipe. I took a can of extra hot rotel an a can of mushrooms and blended them toghter . After the rice sat for 5 min I added half the mixture to it. I also added Mrs. Dash hot n spicey and tomatoe basil to my chicken. I also used three fat reduced mexican cheese. UMM UMM GOOD

It was good, but next time I will use more cheese, chili powder, and ranch. It really didn't have much punch.
