my 3 year old loved the meat and stuffing, which she normally won't try. I liked the suggestion on how to make the potatoes softer, which we prefer.

I've made this recipe several times using boneless, center-cut pork chops in place of the pork loin since I'm only cooking for 2. I use 2 pork chops, each cut in half, and half the rest of the ingredients. It makes a great one-dish dinner which we both enjoy.

My vegetables took up most of the baking pan. The stuffing would not have fit so I left it out and cook the pork in the middle of the sweet potato mixture. It tasted good, we liked it. But I think I prefer to grill the tenderloin. I would prepare the sweet potatoes again this way and maybe add carrots and bell peppers to the mix. The dressing makes a tasty marinade.

This is awesome! I substituted half of the sweet potatoes for white potatoes and it still turned out good. We didn't have any leftovers!

Turned out better than expected from some of the reviews. I used chicken broth instead of water and put most of the stuffing on top of the pork. Nice mix of crunchy and "soggy". Good flavor and moist meat. Very picky husband gave it an "ok". Full disclosure though, he doesn't like sweet potatoes. Will make again and mix in some red potatoes for him.

I did not care for sweet potatoes prepared this way, and the pork came out very dry.
