OK, so its not real risotto, but has become one of my go to recipes. Keep shrimp in the freezer or substitute the seafood you have on hand (its really good with scallops), dried mushrooms in the pantry and I always have the rest of the ingredients in the cupboard. My guys say its one of the best quickie dinners I can make.

Oh man, do they love this one! Make it interesting by experimenting with different mushrooms. Leftovers are great to take to work to 'nuke for lunch, however the shrimp will toughen up a little if reheated too long.

I made this with canned mushrooms, and it was fabulous. Made lots of leftovers that warm up well.

Forget the weeknight--this would be great for company! What a great way to enjoy risotto without all the fattening butter and cream. You don't even miss it. This turned out great and my family loved it. I added a little garlic and white wine, and next time I will increase the amount of rice and broth. It seemed like there was too little rice in proportion to the other ingredients in the risotto.

Pretty good... I forgot to thaw the shrimp so I defrosted them on the fish setting in the microwave. We also don't like mushrooms so we just left them out and it was really tastey!

I have made this recipe many times. It is delicious. To save time I keep cooked shrimp (old bay seasoning recipe) cooked mushrooms and onions in the freezer. Then it is a cinch to throw together on a busy day.

Didn't use mushrooms, added a cup of frozen pea and bit more chicken broth. I also added some garlic. Really good!

Easy, quick and delicious. The risotto without shrimp as a sidedish would be good too.

I absolutely loved this recipe. I am on a diet and it fit right in. I felt like I was finally eating real food again! Excellent.

Way, way too bland for us. Even added a seeded jalapeno. Needs something to spice it up. Would rather grill the shrimp and serve on rice.
