Made the chicken with BBQ sauce version. It was good, but wasn't very filling. we ate almost the whole thing and still had to search for something else to eat! and there are only 2 adults and one child!

Didn't care for the salsa but will try with diced tomatoes next time. otherwise very simple to make and very good.

I just made the ground beef one tonight. It was really good, although I did change it a bit. I added taco seasoning to the beef, and I mixed refried beans and some queso dip and put that on top of the beef. I also used red pepper instead of green onions, as I didn't have any onions. Both my husband and my son had second helpings. Which for my husband, that's huge, because he's not a big casserole fan.

I made the ground beef version....sort of. I added refried beans to my ground meat mixture and also added Mexican Velveeta to my hashbrown/corn mix. I had the hashbrowns, corn, velveeta, and some salsa on the bottom and layered my ground meat, refried bean, & more salsa for the top layer. I then put shredded cheese on top and baked. IT WAS SO GOOD!! I can't wait to try the other versions.

I made this with sausage and green pepper and onions and cheese and put cream of mushroom soup and cheddar cheese soup on it. It was very good ...oh and I shredded potatoes to make this also.Thanks
