I made this recipe using chicken. It's a great quick meal in a pinch when there's not enough time to shop for fresh ingredients or use special appliances just for rice (I used regular rice - didn't have minute rice on hand). There's lots of flexability to use whatever veggies you happen to have on hand (or what ever your family will actually eat!!)

I used garlic powder rather than the ginger, used sliced almonds for the peanuts, and left out the Catalina dressing, and used 2Tbsp. extra soy sauce. This was a great quick recipe, and will make again.

We are not peanut lovers, so I leave those out. I did add a clove of minced garlic and half an onion cut into chunks. Everyone in the family loves it and it's a great way to use an economical piece of meat.

I didn't have Catalina, so I used Western dressing. It was very good. I also added some minced garlic. Easy and tasty. will make again
