Loved it! I found it to be dry, too, and wound up using a full 15.5oz can of broth to get it just right. I also added a bit more cream cheese for creaminess. Short cut idea - use pre-cooked rotisserie chicken and frozen spinach. I always have a roti chicken on hand in the fridge that I buy at my grocery each week for salads, etc... This is a great way to use it up. Also, I just thawed the spinach in the microwave a little and didn't even drain it. The dish needed the extra moisture anyway. I will definitely make this again!!! YUM!
