What You Need

1/4

cup KRAFT Italian Roasted Red Pepper Dressing

lb. boneless skinless chicken breasts, cut into strips

1-1/2

cups fat-free reduced-sodium chicken broth

cups instant brown rice, uncooked

oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, cubed

pkg. (8 oz.) baby spinach leaves

large tomato, chopped

Tbsp. KRAFT Grated Parmesan Cheese

Make It

HEAT dressing in Dutch oven or large deep skillet on medium-high heat. Add chicken; cook 3 min., stirring occasionally. Stir in broth; bring to boil. Add rice; stir. Return to boil; cover. Simmer on medium heat 5 min.

ADD Neufchatel; cook 2 to 3 min. or until melted, stirring frequently. Add spinach. (Pan will be full.) Cook, covered, 1 min. or until spinach is wilted. Stir gently to mix in spinach.

REMOVE pan from heat. Let stand, covered, 5 min. Stir in tomatoes; top with Parmesan.

Prepare using KRAFT Light Zesty Italian Dressing.

Tried this dish for the 1st time and really enjoyed it. I did use more chicken broth than the recipe called for and seasoned my chicken with spices as well. My whole family thought it was great.

I sauteed two cloves of garlic with the dressing and salt & peppered the chicked well. My children (who hate veggies) ate this!

Didn't have the Italian salad dressing, so I used a balsamic vinagrette instead and it was delicious!

I liked the fact that it used brown rice and spinach. After trying it, my 5 yr old decided he likes Popeye's favorite veggie. However, I too, thought it was bland, despite the Italian dressing (I didn't use the LDR version, either). Needed something else--garlic, pepper, maybe poultry seasoning....I was okay w/ the creaminess level, but it was not "creamy" like the title might suggest.

I cubed the chicken instead - made it easier to eat. A family favorite, even my 3 year old loves it.

I found the resulting taste to be very bland. And considering that I did not use any of the lite or fat free types of ingredients, I can only imagine how tasteless it would be if you did. It's definitely lacking in flavor.
