I preseasoned the chicken with Paula Deen's House Seasoning. This dish is Very Good, healthy, and loved by my Mom who does Not like rice!

Great dinner! Even my 3 yr old twin boys loved it. However, I agree with the other comments. Needs more broth and a little salt and pepper.

All in all a great healthy recipe, but mine turned out a little dry. I think I'll add salt and pepper next time as well and maybe more chicken broth.

I used regular rice instead of Minute Rice, so I cooked it 3/4 of the way in advance of mixing with the meat. Next time I would cut the amount of rice in half, as 2 cups of uncooked rice made a TON of rice compared to the other ingredients. Also used cream cheese instead of neufchatel, since I couldn't find it around here. I had to add more broth as the rice got too dry as it cooked. Was very tasty.

I made it and substituted Italian dressing and fat free tub Philadelphia cheese and a frozen box of spinach and it was all very good, though next time I think I would only use about 1/2 to 3/4 of the spinach.
