I used regular rice instead of Minute Rice, so I cooked it 3/4 of the way in advance of mixing with the meat. Next time I would cut the amount of rice in half, as 2 cups of uncooked rice made a TON of rice compared to the other ingredients. Also used cream cheese instead of neufchatel, since I couldn't find it around here. I had to add more broth as the rice got too dry as it cooked. Was very tasty.
