What You Need

1/4

cup KRAFT Italian Roasted Red Pepper Dressing

lb. boneless skinless chicken breasts, cut into strips

1-1/2

cups fat-free reduced-sodium chicken broth

cups instant brown rice, uncooked

oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, cubed

pkg. (8 oz.) baby spinach leaves

large tomato, chopped

Tbsp. KRAFT Grated Parmesan Cheese

Make It

HEAT dressing in Dutch oven or large deep skillet on medium-high heat. Add chicken; cook 3 min., stirring occasionally. Stir in broth; bring to boil. Add rice; stir. Return to boil; cover. Simmer on medium heat 5 min.

ADD Neufchatel; cook 2 to 3 min. or until melted, stirring frequently. Add spinach. (Pan will be full.) Cook, covered, 1 min. or until spinach is wilted. Stir gently to mix in spinach.

REMOVE pan from heat. Let stand, covered, 5 min. Stir in tomatoes; top with Parmesan.

This is easy to make. I made sure to use low-sodium ingredients so it wouldn't be too salty--and it wasn't. In fact, I salted it a little for taste after the first bite. Using a little Mrs. Dash spice sprinkled on top was good too. I will definitely make this again.

Very simple to make and quite tasty. I used two plum tomatoes, which was more than the one cup called for, and it perfect. My family loved it.

This recipe was very good and easy to make. I added a bit more Parmesan Cheese and a some salt. The spinach made the dish colorful and appetizing.

My husband never says a recipe is bad. If he doesn't like it, he'll say "you don't need to make this too often". Tonight when I made this recipe, I asked him if I should make this again or not too often. He said "Maake it again next week!" The chicken was moist & tender, the flavors while cooking had my mouth watering. Excellent recipe and soooo easy!
