What You Need

1/4

cup KRAFT Italian Roasted Red Pepper Dressing

lb. boneless skinless chicken breasts, cut into strips

1-1/2

cups fat-free reduced-sodium chicken broth

cups instant brown rice, uncooked

oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, cubed

pkg. (8 oz.) baby spinach leaves

large tomato, chopped

Tbsp. KRAFT Grated Parmesan Cheese

Make It

HEAT dressing in Dutch oven or large deep skillet on medium-high heat. Add chicken; cook 3 min., stirring occasionally. Stir in broth; bring to boil. Add rice; stir. Return to boil; cover. Simmer on medium heat 5 min.

ADD Neufchatel; cook 2 to 3 min. or until melted, stirring frequently. Add spinach. (Pan will be full.) Cook, covered, 1 min. or until spinach is wilted. Stir gently to mix in spinach.

REMOVE pan from heat. Let stand, covered, 5 min. Stir in tomatoes; top with Parmesan.

I make this one all the time for my family. I think it's great with the cream cheese it makes you feel like you're eating something you shouldn't. I do substitute shrimp instead of chicken and I use light zesty italian dressing instead.

I make this all the time! I have omitted the cheese and added green and black olives. It is great and quick.

I have made this a few times now and we really like it. My husband suggested using shrimp-I don't eat shrimp so I make him a small separate pot with the chicken and shrimp. I also love to add fresh mushrooms when you add the rice as well as using shaved parmesan. Easy and tasty!

This was really good, but using the dressing in the recipe is key.. i think it's really what gives it such great flavor. A lot of reviews mentioned that the cream cheese was overpowering. I actually omitted the cream cheese all together because I didn't have it on hand and I didn't miss it. Just a little parm at the end and it was great!

We love this dish! Great way to get my kids to eat spinach.I make it differently every time. Just depends on what i have on hand. I like to add black beans and mushrooms.

The parmesan cheese taste was a bit much- probably will only go with one tbsp. next time
