I found this to be a very simple and tasty dish. I did not add the mushrooms, carrots or celery. Even without these items, it was great. I loved this because not a lot of prep was required and it was a quick, healthy meal.
I altered the recipe a bit and used Mahi Mahi, sweet potato, and broccoli instead of Tilapia and mushrooms. Kids liked it. The dressing didn't taste well with the sweet potato but all else tasted good.
I added chopped bell pepper,onions, and tomato with a tiny bit of chopped cilantro. I also used some white cooking wine w/lemon. yum,yum.
I baked the foil packs in the oven and it took longer than 15 minutes. I think next time I would choose different vegetables. The mushrooms were awesome, but I would substitute something for the celery. Otherwise, very good flavor and definitely easy!
This was a new taste for the fish eaters in my home and all enjoyed it. My family has asked for it again, soon.
