I made this for the first time tonight, and my husband and I LOVED it! They kinda fell apart, so maybe I made them too thin, and I might add a little extra flour next time, but the taste was great! And I felt so healthy eating them! I have a lot of zucchini (from friends), so I'm glad I found something besides zucchini bread to do with all of it.

This recipe was delicious. My husband loved it. That doesn't happen often. There wasn't any leftovers. I would definetly make this again. I suggest using a food processor. I lot easier. Make sure your oil is hot.

This recipe was really good as a vegetable side dish. However, the next time I will use my food processor to shred the veggies as it took too long on the box grater.

was good but the oil needs to be really hot before you add the cakes. i would recommend checking to make sure it has reached 375 degrees before starting

I added a sprinkle of cheese on top. My husband, who doesn'te eat veggies willingly, liked them and asked if I can make them again.

sour cream is a must, very good, IF you really like zucchini a lot.

Big Hit! I added dry chives to the mixture, and dill to the sour cream. Just Delicious!

i did use dill like another reviewer suggested and it was tasty. i also added some grated parmesan to the recipe. to save time i grated the zucchini but put the carrots and onion through the food processor, therefore this recipe came together in no time at all. it was delicious!!
