My family loves this salad! My kindergartener begs me to make it so he can take the leftovers to school for lunch! lol We do add meat if we have any leftover hamburger or chicken. It's a great change from my husband's idea of taco salad which is heavy on the chips and light on the salad! ;)

I wasn't really dying about this salad. I would leave out the salsa next time.

Hum..Hum!! Very easy to make and colorful salad. We've never eaten a salad like it before so we were alittle afraid to take the first bite. Once we did, we were hooked!!

Made this tonight for my husband and I. He and I really enjoyed it, he said that it was keeper. We did change it up a bit- we added 2 cut plum tomatoes, 2 minced jalpenos, 1/2 cup black olives, and we used medium salsa that we blended with the ranch dressing to make a nice dressing. We also used baked torilla chips, no cheese, and light ranch dressing to cut calories. Overall, a quick, easy, filling and yummy meal!
