This was SUPER!!! We added a little mayonaise to the bottom of one of the tortillas---it's great! And you can add more or less of everything...more eggs, fewer tortillas, etc. I copied down the recipe and kept it since it's delish and quick!!!

This was an amasing breakfast! I added red pepper onion and mushrooms to the eggs. I also put a little salsa on the top layer! It was SOOOOO GOOOD!!! we all loved it. Even my picky 18month old!!

I made this for the breakfast club at work and everyone asked for the recipe. I made one like the recipe and one with ham and green peppers. Very easy and really, really good.

Great for brunch when you have a crowd. A really delicious and easy (but impressive) recipe that can be multiplied easily to meet your guest list. A few additons (ham slices, picante sauce, etc.) can change the basic flavor to satisfy everyone's taste buds.

First time to cook it, extremely nervous, having a lot of ladies over for bible study/brunch....It was an easy-to-make HIT!! I will try again, soon. Maybe use the salsa hint, but cooked right into the eggs instead. My 'picky' daughters want one made just for them!!
