Contrary to my username (which I chose in middle school), I am nothing near a star cook, or even a decent cook for that matter. With that said, this was probably the first thing I ever made that came out AMAZING!!! It was super easy and DELICIOUS! I didn't have mushroom or tomato paste, so I substituted Chunky Mushroom Spaghetti Sauce for that. I subbed diced tomatoes with chilies for the tomatoes, so that added a little kick to it. And I used Parmesan cheese instead of Mozzarella. I probably mess up all the time because of all my substitutions, but it worked this time!!! I served it over rice and it was absolutely delicious! Tasted like someone else's cooking! :)

The flavor and ease of this recipe is good but I agree with the synopsis that it's a very saucy dish. Definitely serve it over rice or pasta. We had a ton of sauce left over after we ate the chicken. I added peppers and olives and it was really good. I'll leave out the bacon in the future because you can't really taste it and it seems like a waste of calories. I also used olive oil Pam instead of olive oil to cut down on the calories. I'll make it again for sure.

THis was easy and good but not very flavorful. Next time I will add more spices. Was actually more flavorful the next day heated in the microwave. I think i will try seasoned tomatoes next time instead of the stewed. Maybe some garlic like another reviewer suggested.

So easy to make and so good. My husband really loves this dish. Tells me it's one of his favorites. This past weekend he used some of the leftover tomato/mushroom mixture to top his breakfast omelette. Said it was heavenly.
