Saucy Pork Medallions

What You Need

tsp. oil

large pork tenderloin (1-1/2 lb.), cut into 3/4-inch-thick slices

can (10 oz.) turkey gravy

1/4

cup KRAFT Zesty Italian Dressing

cups frozen peas

pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken

Make It

HEAT oil in large nonstick skillet on medium-high heat. Add meat; cook 5 min. or until each piece is browned on both sides, turning after 3 min.

MIX gravy and dressing until blended; pour over meat. Add peas; bring to boil. Meanwhile, prepare stuffing as directed on package.

SPOON stuffing over ingredients around edge of skillet; cover. Simmer on medium-low heat 8 min. or until stuffing is heated through and meat is done (145ºF). Remove from heat. Let stand 3 min. before serving.

Variation

Substitute 6 boneless pork chops (1-1/2 lb.) or 6 small boneless skinless chicken breast halves (1-1/2 lb.) for the pork tenderloin. Prepare as directed, increasing the meat browning time to 10 min. and increasing the final cooking time until stuffing is heated through and chicken is done (165ºF).

We don't eat pork, so I used boneless skinless chicken breasts instead, and I also added some fresh sliced mushrooms in with the peas. My husband and I both LOVED it!!

This was an easy and quick dinner! We enjoyed the flavor and didn't have the hassle of leftovers! Another plus with this meal is you get to tell everyone that you made "saucy pork medallions"! I love the name of this dish!

By the time we had dinner, I forgot that I had put the Italian dressing in, and I didn't even notice it. No one else knew about it, and they didn't comment on a funny taste. If anything, the dressing adds to it, so at least try it before you just take it out. It was absolutely delicious!
