Saucy Pork Medallions

What You Need

tsp. oil

large pork tenderloin (1-1/2 lb.), cut into 3/4-inch-thick slices

can (10 oz.) turkey gravy

1/4

cup KRAFT Zesty Italian Dressing

cups frozen peas

pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken

Make It

HEAT oil in large nonstick skillet on medium-high heat. Add meat; cook 5 min. or until each piece is browned on both sides, turning after 3 min.

MIX gravy and dressing until blended; pour over meat. Add peas; bring to boil. Meanwhile, prepare stuffing as directed on package.

SPOON stuffing over ingredients around edge of skillet; cover. Simmer on medium-low heat 8 min. or until stuffing is heated through and meat is done (145ºF). Remove from heat. Let stand 3 min. before serving.

Variation

Substitute 6 boneless pork chops (1-1/2 lb.) or 6 small boneless skinless chicken breast halves (1-1/2 lb.) for the pork tenderloin. Prepare as directed, increasing the meat browning time to 10 min. and increasing the final cooking time until stuffing is heated through and chicken is done (165ºF).

I allways look for things to cook at the last minut and this one made my list of if its easy its on. thank you

We added a side of applesauce. A salad or slaw with it would also be good.

I used BL pork chops instead of the pork loin and more gravy than what the recipe called for to make sure it wasn't dry. I thought this didn't have much flavor and thought the dressing taste was a little strange in this recipe. Also, I didn't like the dressing spooned in the skillet, it got a little mushy. I like having new recipes but think I'll skip making this one again. Thanks anyway!

This meal was incredible. I really like a meal I can cook in one pan and that is quick. I did substitute mixed vegtables (carrots, baby corn, peas and pea pods) for the peas. The entire family loved it. We will definately make this one again.

The family really enjoyed this. Next time they want me to leave the stuffing out so they can eat it separate. And since I'm not a pea fan (family is) I'll put a few less peas in.

I was pleasantly surprised! The meat was so tender and the the combination of Italian dressing and turkey gravy was better than I could have imagined!

I did not have frozen peas so I subsituted frozen corn. My husband generally does not like to eat stuffing, but it was so moist in this recipe that he told me to make it again. I would also season the meat more because I like extra spice.
