Cheesy Spinach and Artichoke Dip

What You Need

can (14 oz.) artichoke hearts, drained, finely chopped

pkg. (10 oz.) frozen chopped spinach, thawed, well drained

3/4

cup KRAFT Grated Parmesan Cheese

3/4

cup KRAFT Light Mayo Reduced Fat Mayonnaise

1/2

cup KRAFT 2% Milk Shredded Mozzarella Cheese

1/2

tsp. garlic powder

Make It

HEAT oven to 350°F.

COMBINE ingredients.

SPOON into 9-inch quiche dish or pie plate.

BAKE 20 min. or until heated through.

Substitute 1 env. (0.7 oz.) GOOD SEASONS Italian Salad Dressing Mix for the garlic powder.

This made-over version of the popular artichoke dip uses 3/4 cup KRAFT Light Mayo Reduced Fat Mayonnaise instead of regular KRAFT Real Mayo Mayonnaise, and a blend of Parmesan and mozzarella cheeses instead of the 2 cups mozzarella used in the original recipe. These simple tweaks save over 50 calories and 5.5 grams of fat per serving when compared to the traditional artichoke dip.

I was disappointed with the taste/flavor of this dip. I have a recipe for a hot artichoke dip that does not contain spinach and like it much better. I asked my husband what he thought and he said, "well, it's different." Maybe you really have to love spinach to enjoy it.

Not only was this dip tasty but it was easy to make and disappeared in no time at all. Absolutely no leftovers, something every cook likes to see. I am not too familiar with artichokes or artichoke hearts and the only time I tried to cook them from their fresh form, it was a disaster. Add to that the tips on how to make this dip "lighter" and we have a keeper. Thank you. Note: I would like to see more about cooking with artichokes.

This dip is fabulous! It's a staple at our parties and gatherings. Try using marinated artichokes (2 small jars) and use 1/3 cup of the marinade. Yummy with corn chips or tortilla chips!
