Irish Colcannon with Bacon

Irish Colcannon with Bacon recipe
If Irish eyes are smiling, it could be because we added bacon to the potatoes and cabbage in this colcannon—and it's still a Healthy Living recipe!

This is yum. We are bacon fans so we did 6-7 slices crumbled. Had to cook cabbage longer than 7 min, probably because ours wasn't really shredded but chopped. The result was delicious hot or cold (leftovers). Definitely a repeater.

My Irish grandmother made colcannon. Her version didn't have bacon, She said it was a special occasion food in Ireland, always served at birthday parties with charms hidden in it. The charms had meaning; a penny meant you would grow up to be rich, a button meant you would be happily married, etc. I have forgotten some of them. I've never used charms, but I love colcannon. Can't wait to try this recipe with the bacon. Sounds yummy.

Much better than ordinary mashed potatoes. I would also add more bacon, and perhaps add chicken bouillon to the cooking water because I felt like taste was just slightly bland. I still felt this was a great and unusual recipe.

My husband was skeptical, so I made regular potatoes and this to see which my family preferred. This recipe was gone and asked for every night that week. Will definitely make again, only I will add more bacon like the others suggested. But all in all, it was great.

Very good. Made it for a potluck and it was very popular. The combination of potatoes, cabbage, and bacon is delicious.
