I used ground turkey instead of ground beef and it turned out fantastic!

this was AWESOME with a few minor changes. used 1 1/2 lbs meat, threw in a can of chipotle white corn and used velveeta queso blanco that was thrown in and allowed to melt with the meat mixture. also used buritto size tortillas. definately will make again!!!

Absoultely easy to make and tastes just as good as if it came from my favorite mexican resturant. I will be adding this to my "favorite recipe file" and will share it with my family and friends!

I have one piece of advise for anyone who makes this and other Mexican recipes calling for oregeno. Use MEXICAN oregeno, not the traditional oregeno used in Italian dishes. You will be amazed at the delicious difference. Cumin and chili powder are a must in this.

My husband and I loved these. The only problem I had was they were really greasy. I probably got the temperature wrong. But they were still delicious!

I made these for Cinco de Mayo and they were FANTASTIC!!! My husband asked over and over again if I had actually made them.. Score!! I did use Kraft Mexican Cheese with a hint of Philly instead of the Velveeta in them, and they turned out delicious! I served them with chips and homemade nacho cheese sauce (made from the new Queso Blanco from Velveeta and Rotel).. This is my NEW favorite mexican meal to make at home!

My husband is pretty picky but he really liked these. I put salsa on top of the chimi's and then the sour cream. I loved the crispy crust. I will be making these again.

You can also use cooked shredded chicken. I use to work in a restaurant that made these and love them. I use shredded cheese and after enclosing them with toothpick mix up sugar, cornmeal and beer together in a seperate bowl and dip them in that before frying. It gives them more flavor. Also serve with some homemade salsa.
