I just made this recipe for "a dish to pass" and I wasn't too sure about making it because I didn't sound like it was going to be saucy/creamy enough, but it was perfect! Everyone loved it!! I was also very impressed with how easy it was to make and put together!
Made this with marinated grilled steaks and a salad, it was terrific. A nice variation from everyday potato salad. We served it hot. When I make it again, I will carmelize the onion, corn, and red pepper if I plan to serve it hot. I also would add some cheese, maybe monterey jack or sharp cheddar. Overall though, this is a great recipe and was a big hit at our cookout.
My husband is VERY pickey about food and which foods can be "mixed" together. We usually have everything plain and seperated. When I red the ingredients I knew he would like it. So, without telling him I made it and served it up. He LOVED it. The sauce mixture has the greatest taste. It was so good. He even asked me to make it for his fathers retirement party! It was a big hit!
I made it because it sounded so good. I took it to my family reunion and even my daughter who doesn't really like the traditional potato salad loved it. The recipe is a wonderful variation of an old standby and it is very easy to make. I used real bacon bits for the bacon. Very delicious.
This was fantastic! Great new taste for an old stanby dish to go along with a grilled entree. This is good enough to take to a church pot luck supper. I think it would even taste good warm in the Winter.

I liked this salad, but I would decrease the amount of corn. Mine seemed like corn and bacon salad with potatoes? Tasted good.
A great addition to a summer BBQ! So easy to make and different than a traditional mustard potato salad. I would recommend cutting the potatoes into smaller bite size pieces.
This is a great variation to the traditional potato salad. My whole family really enjoyed it. It is even better the second day!
