This is always a hit at our house-- this salad or a variation of it is a summer staple. Perfect with anything from the grill. Often we omit the cheese and green pepper (depends on what we have on hand). Tastes better when allowed to marinate a few hours and keeps well (a day or two in the frig if it lasts that long-- great as a leftover the next day for lunch!) Experiment with different vinegars for variety. We like balsamic and seasoned rice vinegar (slightly sweet), also red wine vinegar is good. You may want to add a bit of sugar to balance the acid level, depending on your preferences and the vinegar you select.
