I made this recipe for a pot luck this weekend. I used whole wheat pasta & shredded carrots. It was so easy to put together and everyone enjoyed it!

Didn't have red pepper so I used green pepper and I also added sliced radishes. Went home with an empty bowl!

I made it for a family gathering and everyone loved it. No one believed it was low fat and calorie. I will definitely be making this again.

Very good take on a pasta salad. I added dried sweet cranberries to the salad. Yum. I also used mayo instead. Will make again!

I found the combination of Miracle Whip & Italian dressing a little too tangy, plus the serving sizes were not enough for a large crowd. I remedied this by increasing the elbow macaroni to 2 cups & then adding 1/2 cup of sour cream.

It was ok, but not great. Not a huge Miracle Whip fan, so maybe next time I try it, I will use regular mayo.
