I made this last night and my husband and I loved it!! I did add taco seasoning to the meat and I also sprinkled a little mexican cheese on the top of the enchilada's before I put the pepper jack cheese on, it gave it a little more spice!!

For some reason my tortillas were so mushy. And I agree the taco seasoning may have helped, but overall, I wasn't impressed and would not make this again.

I made this recipe with chicken and used regular pepper jack cheese slices. As soon as it came out of the oven they were gone. This is an absolute favorite and my son keeps asking when im gonna make them again! This recipe will be made a lot. Very Yummy!

I made this last night and my fiancee loved it. I only got to eat two of them and he ate the rest! I put a little bit of taco seasoning in meat and it made it have a lot more taste. Will make again!!

This recipe was tasty. I used Velvetta Mexican Cheese instead of PepperJack. Also, 1 lb. of ground beef barely filled up 10 tortillas, but maybe I just like fuller enchiladas. :) I used flour tortillas also. But it was such a GREAT and easy dish!!

it really taste great but putting it together is a huge pain..maybe use flour tortillas would be better.

They tasted pretty good but will make again with taco seasoning in the meat. Needed a little bit more spice.
