This recipe was great however I added taco seasoning to the meatand used New Mexico Red Chile sauce instead of the enchilada sauce. It was delicious!

I tried this with the corn tortillas, but my family prefers flour, so made them with flour the next time, HUGE success and ohhh so easy! Served with guacamole and sour cream - yum yum!

I used flour tortillas and pepper jack cheese rather than the corn tortillas and Velveeta. If you'd like to add an additional kick to this recipe, cook the beef with taco seasoning instead of the enchilada sauce.

My family and I loved this meal I loved it because it was simple and fast my fiance loved it because of the spicy in it and our child loved it becuase it was kind of like taco's he said. It was great.

MY HUSBAND LOVED THIS. I USED JUST REGULAR PEPPER JACK CHEESE INSTEAD OF VELVEETA. IT GAVE IT A REALLY GOOD FLAVOR. HAVE MADE SEVERAL TIMES.

My family loves this recipe. We sometimes will substitute cheddar cheese for the Velveeta if we are not looking for a spicy dish, but want this great flavor! I softened my corn tortillas in the warmed enchilada sauce...I don't recommend this for the faint of heart - it makes a mess! I use lots of wax paper. This required me to double the amount of enchilada sauce I used as well.

Quick and easy to make. Really good flavor, my husband loved the pepper jack cheese. Next time, I would add more sauce to the meat, or cheese. But over-all, very good!

I changed this recipe a little to include ground turkey, and deli slices of pepper-jack cheese. It was absolutely delicious!

Me and my husband (who is a picky eater) LOVED this recipe! Would give to anyone, this is a GREAT dinner...would recommend that you season the meat with a Taco seasoning, gives it some good flavor.
