A great and Easy Appetizer to make.
I butterfly cut the shrimp, so the shrimp looks larger and put a dollap size of stuffing on top. It browned nicely. i didn't have parsley or parmesean cheese, so i substitued w/ cilantro and mozzarella. just as yummy. i am having a party for 20 next week. plan to make it again. Another thing, get the kids involved by having them crush the crackers in a ziploc bag, while you cut the shrimp and get the other ingredients ready. This is a fast, easy, and delicious appetizer.
