I've made this recipe several times now -- it's so good & easy to make. I substituted vegetarian crumbles for the beef, diced canned tomatoes in various flavors instead of stewed tomatoes, organic raw sharp cheddar instead of conventional, used various types of beans, added extra chili, extra cumin, a dash of cayenne pepper, & granulated garlic & it turns out dee-lish. The only Mac dish that I like better (so far) is the Italian Cheddar Bake, (but I've always had a thing for casseroles ;)
