Soo good!!! We love loaded baked potatoes so the idea of putting it into a soup for the colder days was incredible. I boiled my potatoes on the stove, doesn't take much time and I just prefer it that way. Great recipe!!
I took this and ran with it! I use the Steam and Mash potatoes, after being steamed I put them in the broth/milk on the stovetop, add bacon pieces and green onions. I let everything cook for about an hour! Its my husband's favorite dish I have ever made!!
This was easy to make and it didn't take long. Plus, all 4 of my children loved it!
I love this recipe but I tweaked it quite a bit. I used hash browns instead of potatoes, already cooked so no need to mash! I also used heavy whipping cream instead of milk. It added flavor and thickness. I also sautéd the onions in a little butter before making the soup on the stove
Super yummy with some tweeks....I didn't see the need to cook it in the microwave, I cooked the potatoes in the chicken broth (boiled them like making mashed potatoes) until they forked easily and mashed (not as much as mashed potatoes, left it real chunky), then added the milk and other ingredients. This soup isn't very thick so I added just a little bit of potato flakes to thicken it up. It also is a little blah in flavor so I added salt and pepper to taste, 2 tablespoons of butter and a little more cheese. My husband and I both loved it, we've already made it again. I loved just basically throwing all the ingredients in at once after the potatoes are cooked. Oh, we also didn't quite like all of the potato skins the first time, so the second time I peeled some of the potato so there wouldn't be as much skin and we liked it even more. We're definitely keeping this recipe
It was very tasty! I need some help though, cooked the recipe in Microwave per the directions but my potatoes were to hard to mash so I took them out of the soup and Microwaved longer! Did anyone else have the same problem?
We LOVED this!! Made it just like the recipe is and added our own salt & pepper to taste. We even put it in a yummy bread bowl. DELISH!!
Would not recommend. Only thing i liked is that it was easy to do using the microwave. However, Mashing the potatoes gave it a strange texture that none of my family cared for...we much rather prefer the milk/creamy soup with cubed potatoes. Also it was very bland...Had to add salt/pepper to taste but it still did not give it enough flavor. Would not recommend this recipe for anyone who has potato soup before, this is just as the name...taste like a loaded mashed potato...just pureed.
I love this recipe, I cook it on the stove instead of microwaving so I add more chicken broth and milk obviously but we love it especially in the colder winter months!
I've made potato soup before and I wasn't impressed with this recipe. I had to add a bunch of stuff to it: potato flakes to make it thicker, salt, pepper, butter and about a cup of cheese so it wasn't so bland.
