Loaded "Baked Potato" Soup

What You Need

lb. baking potatoes (about 2), cubed

can (14-1/2 oz.) fat-free reduced-sodium chicken broth

cup milk

slices OSCAR MAYER Bacon, cooked, crumbled and divided

cup KRAFT Shredded Cheddar Cheese, divided

green onion sliced, divided

1/4

cup BREAKSTONE'S or KNUDSEN Sour Cream

Make It

MICROWAVE potatoes in large microwaveable bowl on HIGH 5 min., stirring after 2-1/2 min. Stir in broth and milk. Microwave 10 min., stirring after 5 min. Carefully crush potatoes with potato masher.

RESERVE 2 Tbsp. each bacon and cheese and 1 Tbsp. onions for topping. Stir remaining bacon, cheese and onions into soup.

SERVE topped with reserved bacon, cheese, onions and sour cream.

As I was making this I kept thinking that this was too easy to taste very good. But I was wrong, it was great.

This soup is great!! Made it just as the recipe says and it turned out wonderful! Only thing I did different was added a little of the bacon grease to give it some flavor. Next time I will make it on the stovetop. Took a little longer in the microwave then stated. But still a good quick soup!

Very good and easy!! I used velveeta instead of cheddar and added sour cream with chives instead of adding the onion. Delicious!!

This is my favorite potato soup recipe! I like that it isn't as thick as what I think of as traditional potato soup. It's great! I make it all of the time!
