Loaded "Baked Potato" Soup

What You Need

lb. baking potatoes (about 2), cubed

can (14-1/2 oz.) fat-free reduced-sodium chicken broth

cup milk

slices OSCAR MAYER Bacon, cooked, crumbled and divided

cup KRAFT Shredded Cheddar Cheese, divided

green onion sliced, divided

1/4

cup BREAKSTONE'S or KNUDSEN Sour Cream

Make It

MICROWAVE potatoes in large microwaveable bowl on HIGH 5 min., stirring after 2-1/2 min. Stir in broth and milk. Microwave 10 min., stirring after 5 min. Carefully crush potatoes with potato masher.

RESERVE 2 Tbsp. each bacon and cheese and 1 Tbsp. onions for topping. Stir remaining bacon, cheese and onions into soup.

SERVE topped with reserved bacon, cheese, onions and sour cream.

Extremely tasty and very easy to make! I made this as part of a dinner for my in-laws, and got MANY compliments! Can't wait to make it again! To make it a little creamier, I added a little of the sour cream to the soup. Delicious!

Halved this recipe to make it for two. It was so good I ate both!

Good flavor but much too thin. I will make again but this time on the stove and with less chicken broth.

It is very tasty. The microwave cooking time varies -- mine took 20 min. If you don't have bacon on hand, use packaged real bacon bits. I used regular onion and carmelized it before adding it.

This is extremely quick and GOOD. I made it a bit richer with a touch of 1/2 and 1/2.

THIS WAS GREAT TO MAKE WITH THE KIDS. THEN E CHANGED IT A LITTLE. INSTEAD OF THE BACON, ADD 3 CRUSHED GARLIC CLOVES AND 1/2 CUP OF CILANTRO TO THE POTATOES THEN COOK COVERED FOR 10 MIN THEN FOLLOW THE REST IF DESIRED. GREAT COMFY FOOD!!!!!

I liked this recipe except try this...Instead of the chicken broth use a can of potato soup. This makes it thicker. I also mashed half of the potatoes and leave the other half chunky.

This was easy and delicious. I added seasonings to my taste and the family loved it.
