Loaded "Baked Potato" Soup

What You Need

lb. baking potatoes (about 2), cubed

can (14-1/2 oz.) fat-free reduced-sodium chicken broth

cup milk

slices OSCAR MAYER Bacon, cooked, crumbled and divided

cup KRAFT Shredded Cheddar Cheese, divided

green onion sliced, divided

1/4

cup BREAKSTONE'S or KNUDSEN Sour Cream

Make It

MICROWAVE potatoes in large microwaveable bowl on HIGH 5 min., stirring after 2-1/2 min. Stir in broth and milk. Microwave 10 min., stirring after 5 min. Carefully crush potatoes with potato masher.

RESERVE 2 Tbsp. each bacon and cheese and 1 Tbsp. onions for topping. Stir remaining bacon, cheese and onions into soup.

SERVE topped with reserved bacon, cheese, onions and sour cream.

This was amazing..after reading reviews I decided to thickened my soup. I simply took a few of the cooked potatoes and the milk and out that into the blender and added to the soup.. thickened it up nicely! Almost makes me wish for cold weather!(I said ALMOST!)

We love it. I substituted sautaed diced onions and left over ham for convienience and cost. I also used extra potatoes. But my best tip is to let the kids choose thier own topping within reason. This way everyone participated and ate thier own creations.

This is a very vague recipe, doesn't seem like it would make much, but then again--it doesn't tell me!

I wasn't real thirlled with this recipe. It was a very thin soup & I was looking for something more hearty for a cool fall day.

Wow...this is what people want. Ideas of the simple, to turn into something eye appealing, that grab your taste buds of something that one knows, and can be not only family friendly but can be a show piece in a dinning experence.

I was skeptical of the recipe's simplicity and microwave...but pleasantly surprised with the flavor and consistency. I left the skins on the potatoes, used sauteed yellow onion and garlic instead of green onion, and added some parmesean. Yummy!

My whole family LOVES this recipe...the first day it started getting cool everyone was excited that it was baked potato soup weather. It's a quick dinner, too.
