Loaded "Baked Potato" Soup

What You Need

lb. baking potatoes (about 2), cubed

can (14-1/2 oz.) fat-free reduced-sodium chicken broth

cup milk

slices OSCAR MAYER Bacon, cooked, crumbled and divided

cup KRAFT Shredded Cheddar Cheese, divided

green onion sliced, divided

1/4

cup BREAKSTONE'S or KNUDSEN Sour Cream

Make It

MICROWAVE potatoes in large microwaveable bowl on HIGH 5 min., stirring after 2-1/2 min. Stir in broth and milk. Microwave 10 min., stirring after 5 min. Carefully crush potatoes with potato masher.

RESERVE 2 Tbsp. each bacon and cheese and 1 Tbsp. onions for topping. Stir remaining bacon, cheese and onions into soup.

SERVE topped with reserved bacon, cheese, onions and sour cream.

I've made this a few times now and my family loves it. My husband will beg me to make this when it's cold outside. It's so easy and yummy!!!

I also have used velvetta instead of cheddar and it turned out wonderful.

Potatoes took longer to cook in my microwave. I prefer either a smooth & creamy soup or a soup with cubes of potatoes. Mashing made them a bit "grainy"? Soup was thinner than I like. I added cream of chicken soup to thicken some.

I made this tonight and loved it. It was just what I needed on a rainy day, so comforting. This was so easy to make too! I prepared it all on the stove, instead of using the microwave and it turned out terrific.

This recipe was fast and delicious! The cooking time in the microwave was a little longer than expected, but I would definitely make this again.

fantastic! family loved it. next time i'll have to double the recipe! i did not cook the potatoes in the microwave as per directions but on the stovetop. tasted great!
