I didn't have chicken broth/stock on hand so I made due with 1tbsp corn starch, 1/2 cup water. It was thick and creamy. I will peel the potatoes next time.

It seemed a bit watery so I put some instant mashed potatoes in it and it still retained the flavor but made it creamier and thicker

Very good soup. I added a few handfuls of potato flakes to the soup to thicken it. My kids loved this soup and wanted more, so I will double the recipe next time. Very quick and easy. I was able to do some prep ahead of time and at dinner time, only spent 10 minutes heating it up. Potatoes can be microwaved ahead of time, chop green onions, and shred cheese. Also can make a salad ahead of time, and then dinner is on the table in 10 minutes.

The soup was too thin for me but had great taste. I will make it again but try some suggestions on 1/2 cup milk and some heavy cream. Just needs to be thicker!

I made the recipe tonight. I had 3 fairly good size potatoes so I don't know if this made it so the pototoes didn't cook well in the microwave? I ended up putting it on the stove to simmer. It softened up the potatoes. I added in some pepper and regular onion instead of green onion. Make sure you have a potato masher on hand....i was short one of those too!

I liked the flavor after adding a little salt and pepper. It was a little to thin for me, so I added some dried potato flakes to thicken it up and not lose the potato flavor! It is a soup that will taste better on the second day because the flavors get to meld!

I used 1/2 cup of milk and 1/4 cup of heavy cream. This made the soup thicker and the taste was wonderful!!!!

Liked the overall taste. Too much liquid - would either halve the milk and broth or use more potatoes next time. Also think I would skip the "baking," peel the potatoes and boil everything on the stovetop - the microwave cooking just wasn't effective.

Very thin. I used 4 potatoes and added some flour to try to thicken it up. Taste wasn't bad just too runny for my taste.
