I altered this some for my family's tastes. I started with some minced onion, pepper flakes and garlic in my olive oil. I browned my chicken and added some left over spaghetti sauce b/c my husband doesn't like diced tomato. They won't eat red peppers either. We had this over white rice. I think next time I'll use brown rice to make it healthier. I added a little extra oregano at the end to boost the flavor and everyone enjoyed it.
