Our family loves meat loaf and we found this recipe to be exceptioal. We also enjoyed the sandwiches the next day.

This is by far one of the best meatloafs I've made. I love the Mexican twist on it and is far from being a dry dish. I find that is most people fear a dry meatloaf!!!

I hate meatloaf but I LOVED this. My family was shocked when I made it. I used ground turkey instead of beef because part of my family can't have beef.

Great change from regular meatloaf. I added extra salsa the second time I made it ans put a 16 oz. of tomat sauce on top before the cheese. Delicious!!

I didn't feel the chilli powder gave it enough flavor. Next time I am going to try adding an envelope of taco or fajita seasoning. You can never have enough cheese, so I added some in the mix. I think I'm going to add more next time. I'm also going to add more salsa to the mix (chunky) I really loved the flavor it gave when I came to a bite with a chunk of tomato. All in all I really liked the recipe, it gave me a starting point to be more creative.

The chicken flavoring in the stuffing was a bit much for us. I would not make this again.
