I was looking for a quick meatloaf recipe and stumbled onto this one. It was fabulous. I just put everything into the recipe, I didn't split up the salsa and cheese. I crush the stuffing mix a little also, before adding it to the recipe. I also slice it thinner then recommended. I live by myself so i freeze the leftovers. I made it for company and always get asked for the recipe.

This was a fun variation on traditional meatloaf. It was a bit spicy since I used the hot salsa but we enjoyed it that way.

This recipe was delicious!! I used extra-lean ground beef and it turned out perfect. It was very easy and I would make it again.

I am not a meat loaf eater, but I had 2 helpings of this! I love the stuffing taste. It was just the right flavor. I don't like a moist/mushy meat loaf and this was perfect for me. It was so easy to make, and with stuff I normally have in my pantry. I WILL be making this again.
