This recipe is excellent. My 16 year old son usually dislikes fish!----Even he "Loved" it!.

So I saw the suggestions and used about 1.5 cups of chicken broth. I also used diced tomatoes that were chipolte flavored. I used tilapia and I cooked this in the oven on 350 for about 45mins. At about 30 mins it looked like it needed more liquid for the rice so I pureed some salsa into a very liquid state and poured it over the dish. Then when only 8 or so minutes were remaining of the 45 I poured monterey jack/colby cheese on top. It had a bit of a spicy mexican theme but it was very tasty and the rice was very well seasoned and moist. I may try this again with Chicken too.

We really enjoyed this dish. I made the rice separately from the fish since I didn't have instant rice. Still worked out great.

Really good recipe. I made it in a skillet instead because I didn't have a good casserole to use in the microwave but this turned out great!

I altered this recipe by using veggie broth instead of water, added white wine to make enough liquid to cook rice. Dipped fillets in melted butter, sprinkled with italian seasoning.Added coarsly chopped onions & roasted peppers with tomatoes. Absolutely fabulous.

as in other reviews I used broth and spiced it up it was excellent with the changes 40 minutes covered and 5 minutes uncovered YUM

Took other reviewers advise and used 1 cup chicken broth and baked covered with foil for 40 minutes. Added cheese and recovered to bake the last five minutes. Fresh tilapia is a good choice to use.

Extremely easy and fast but rather bland; I would recommend adding any spice you can think of to add some flavor. I used italian-seasoned tomatoes, which helped. Per other reviews, I will probably try adding some chicken broth next time. It also needed more water to cook the rice.
