Was very good you don't really know that you are eating zucchini, didn't have the mozzarella cheese so I used half swiss and half american cheese. I'm going to make it again for my sister when she comes. Would recomend that you try it.

EXCELLENT! I substituted a can of green beans since my son won't eat zucchini. Was very tasty and I've got this on my "Definitely Make Again" list. Since we were on a rushed schedule the evening I made this, I put it in a slightly larger pan so the loaf would be thinner and bake quicker. You could also make in a muffin pan for individual servings. The Stovetop Stuffing mix provided the perfect seasoning for this meatloaf.

Great tasting. My husband said it tasted like a noodless lasagna, plus a bonus put more cheese on top to hide the zuchinni, nobody will know they are eating healthy!!

We loved this! My husband was ready to eat the whole pan. I did add some addl garlic and hot & spicy Mrs Dash as we do like alot of spice also used Italian season in place of Oregano. The stuffing mix helps keep the extra lean meat moist.

I prepared this recipe on 9/17/06 for about twelve of my family members and they all loved it. I actually doubled my recipe and used what the recipe called for on one and used green peppers and mushrooms on the other. I will try adding pepperoni next time. Thanks!!

Too bready. Too commercial. Appeared to be stretching the meal so far that it was hard to recognize it as meatloaf. No seasoning for flavor.

I liked this recipe and so did my family. I added onions, garlic and did not add as much oregeno as suggested. I did not use the zucchini, but used the mushrooms. My husband is a picky eater and he liked it.

I, myself, am not a very big meatloaf lover but this recipe was very tasty. My husband and daughter just loved this. This is the first time they asked me when I am going to make this again!
