This was very flavorful and a great twist on meatloaf! Easy to make and divide up for lunches on the go.

Next time I try this, less SAUCE and cook at least an hour 20m or 30m. It was a huge pile of mush.

I added minced garlic & diced onions. I liked it. We let the kids pick the mushrooms out. I probably won't make it again just because it wasnt that great.

I added 1 tbs minced garlic and 1/2 cup Mozzarella cheese to the meat mixture and another tbs of garlic to the veggies. Baked for 45 min with the foil on and 15 with it off - came out perfect and very yummy!!

I made my own meatloaf (I don't use stove top and I like to add 1/2 can tomato sauce w/ 1/2 can Worcestershire sauce into the meat). I pour the other half of the tomato sauce on top. I did summer squash on top. Delicious.

this recipe was very easy, i used ground turkey instead of beef.

I don't like meatlosf but this was so delicious. It was very moist. The only problem is that I only had 80/20 ground beef instead of lean which made it extremly greasy. I will try making this again however.

I loved how the sauce made the meatloaf so moist but i didn't like the zucchini on top of it because when the meatloaf was cooked through the zucchini wasn't. I would actually saute the vegetables first next time before adding them to the meatloaf.
