This recipe was pretty good. But it was not real cheesy. And make sure to crush up the cereal topping, I did not and the cereal fell off. And I just melted butter in a small dish and drizzled on the butter over the cereal. It seemed a little easier than what the recipe called for. Over all I would make it again but maybe a little more cheese.
I have the original recipe from almost 30 years ago (originally called German potato caserole) and this is a lot easier to make but I still prefer the older version, when I have the time to make it. Originally the topping was just 1/4 cup crushed cornflakes and 2 Tablespoon room temp butter mixed together. I love the idea of the onion topping but don't add onions til the last 5 min of baking. This recipe compared to mine is also missing the chopped chives or green onions added to the potatoe mixture.. about 1 Tablespoon would work for this smaller version recipe.
This is my babe's fav side dish now! Quick, easy, and yum!!!!!!!!!!!!!!
I will make this again and again. I think next time, I am gonna use fried onions for the topping instead of the Ritz chips.

I made this for the first time at Thanksgiving and my family wanted it for Christmas too.
My family loved it! They usually turn down a recipe with sour cream in it. But even the pickest eaters came for seconds and leftovers the next day. We are making it again tonight and for a gathering tomorrow. It is an awesome addition to any meal. You have to try it at least once, you'll be hooked!
