Broccoli-Cheddar Chicken Bundles

Broccoli-Cheddar Chicken Bundles recipe

This recipe is simple and delicious! I also used the Parmesan Crusted Shake 'N Bake and real bacon crumbles. We will definitely make this many times more.

I would season the meat to your liking and tasting. When you got a bite of the meat with no filling, the meat tasted plain. But this is a great recipe! And use big toothpicks, because they get lost in the chicken when they cook!

This recipe was good, next time I will not that I didn't need nearly enough of the cheesy stuffing, I had a lot left over. All in all it was good though.

I think that I would have enjoyed them more if I had used a boneless chicken breast instead of the chicken thighs.

This was a breeze to assemble. Don't let the picture fool you. I made a little assembly line of ingredients and it went by quickly. I used fresh Brocoli insterad of frozen. I used the left over cheese, brocoli & bacon bits to sprinkle of the bundles during the last 2 mins. of cooking. I also used chicken breast and cut down the center to make thinner breasts out of, I got 2 bundles for the price of 1! Hubby said it looked fancy and daughter said it was great! Other mix in ideas might be to add sautee'd mushrooms, onions and bell peppers. I served this with mashed potatoes and a corn green bean mix! I LOVED this recipe and will make it a regular.
