What a hit!! I omitted the green onions & put sprigs of fresh cilnatro in instead! Delish!

My whole family loves them and very easy, also made vegetarian with refried beans instead of chicken.

Made these quesadillas for dinner....was a huge hit!! They were so easy to make and clean-up was a breeze. I started with a rotisserie chicken and added ingredients from there. We topped with sour cream & salsa and made a side order of spanish rice. This is a definite DO-OVER and will be added to our monthly menu.

I made a salsa by doubling the salsa, corn and beans. I used half for the quesadillas and the other half for "dipping while eating". My kids loved it.

A family favorite!! I make it on the George Foreman grill, soooo easy! And fast clean up...alway a hit!!!

I love this recipe, it is one of my favorites. I like to add a little cilantro to my quesadillas, it blends nicely with the other flavors. These quesadillas are very good dipped in ranch dressing. I will make this time and time again. Thank you for the wonderful recipe!

We loved the recipe!! Next time we are going to add grilled pepers and onions. I never would have thought to add corn and black bean but they were a great addition.
