i changed it up for some of my picky eaters, and it was good and they ate! and it great for getting rid of leftovers.

I loved this recipe. It was absolutely delicious and so simple to make. It was a great alternative to my boring tacos and I will definitely make this recipe again.

I've made this recipe several times and it's simply delicious and easy!! I use pre-cooked fajita chicken to save on time and I also add spanish rice to the quesadillas themselves. Lots of cheese helps hold them together. However, I don't cook them in the skillet...I use the George Foreman grill. This takes away the flipping part and grills evenly on both sides! If you have one, I strongly suggest using that instead of the skillet. Enjoy!!

I seasoned the chicken when I baked it with a chiptole rub, onions, garlic, white pepper, and smoked paprika. Than I tor apart the chicken added the beans, onions, and corn and some more garlic. Warmed it up for awhile. Than put them together. I used a mexican blend cheese and also choped up some jalpeno's and put them in also!! Awesome!!
