That chicken left over from Sunday? It just became a cheesy, yummy melt with veggies and salsa in a mere 16 minutes. Monday never looked better.

Sometimes we have to eat late. This was very easy to make and light on the stomach.

I think 1/2 cup green onions is way too much - I used just two onions and that was more than enough. Otherwise, put your skillet on med. heat at the most, and top with a little light sour cream. Yum!! My husband loved it.

I didn't have quite enough chicken, so I made 6 instead of 8. I put it on med-high heat like the recipe calls for, & the first 2 burned immediately and got stuck to the pan. Med-high heat is TOO high, @ least for my oven. I also put the salsa on the side, the quesadillas were stuffed as it is.

These were great! I added some red bell pepper and tomatoe and served it with sour cream and salsa on the side. Very easy to make - will make these again.

These were really tasty. I served them with sour cream, guacamole, and some salsa on the side. we'll definitely make these again. Easy, too.

This was great. I made it for my family and they loved it. I use to put bell pepper, chicken, and cheese in my quesadillas but my husband doesn't like bell pepper. He loved this.

Great! It was so easy to make and delicious. What didn't fit in the tortillas we ate with chips! So good.
