This is delicious! We used smoked chicken, from our local grocery, and frozen corn thawed in water. We mixed all the ingredients, except cheese, together and layered in the tortilla with cheese on both sides. After all, it is a qesadilla. We then grilled it on the George Foreman for about 3 min. We served with a ceasar salad. For leftovers, store the mixture separately in the refrigerator, layer with cheese in tortillas, and grill just before serving. Without smoked chicken, this might be good with taco seasoning or cumin, celantro, and/or lime juice.
